The Predator sees in infrared naturally; that isn't a function of his mask. The different vision modes available to him are all presented in infrared; a human wearing the mask would see nothing. When the Jungle Hunter took off his mask, what we saw was the oppressive heat and humidity of the jungle fogging his vision.
