If you're looking for a classic brunch dish, it doesn't get much better than eggs Benedict. With a crispy English muffin, thick salty bacon ... these eggs Benedict rolls come in.

I like a thicker pesto. To assemble the rolls, place some fresh watercress on the rolls followed by the cooked bacon, fried eggs and finally some of the pesto. Serve immediately.
